To make the waffles, in a large bowl, whisk together the flour, cornstarch, sugar, baking powder and salt.
Stir in the egg yolks, milk, butter and vanilla (if making sweet waffles) until smooth.
In a separate bowl, beat the egg whites until stiff peaks form. Add to the batter and gently fold in with a rubber spatula.
Preheat waffle iron and grease lightly with cooking spray. Add the batter to the hot iron by using an ice cream scoop or a 1/3 cup measure. Cook according to your waffle iron’s directions until crisp and golden brown. Keep warm on a wire rack set over a baking sheet in a low oven.
