This Soul-Satisfying Soup Needs Just 3 Ingredients

This comforting tomato soup is a meal all on its own — no grilled cheese required. The secret is my favorite Trader Joe’s freezer find. Most grocery stores sells pre-made gnocchi, but only Trader Joe’s stuffs theirs with sauce and cheese. There’s no need to thaw the Outside-In Stuffed Gnocchi for this soup. Add them straight from the freezer to a pot of simmering tomato soup and cook until they are heated through. Just before serving, stir in two big handfuls of fresh baby spinach, and wait mere seconds for the leaves to wilt before ladling into bowls.

Tomato Soup with Gnocchi and Spinach

Ingredients

  • 1 (32-ounce) box

    Trader Joe’s Creamy Tomato Soup

  • 1 (16-ounce) package

    Trader Joe’s frozen Outside-In Stuffed Gnocchi

  • 2 cups

    baby spinach

  • Olive oil

  • Freshly ground black pepper

Instructions

  1. Heat the soup in a Dutch oven over medium heat until simmering. Add the gnocchi and cook until tender, 8 to 10 minutes. Stir in 2 cups baby spinach and cook until just wilted, about 30 seconds. Ladle into bowls and top with olive oil and cracked black pepper.
