  • 12 cupenchilada sauce

  • 12 sliced green onion
  • 1lime, juice of (optional)
  • 3tablespoons chopped fresh cilantro (optional)

    DIRECTIONS

  • Preheat oven to 350F.
  • Place rice in a 2 qt baking dish.
  • In a medium saucepan, bring chicken stock, enchilada sauce, oil, salt, pepper, and taco seasoning to a boil.
  • Pour this mixture over the rice and stir.
  • Cover tightly with foil and bake for 30 minutes.
  • When the rice is don, fluff with a fork and stir in the sliced green onions.
  • If desired, stir in cilantro and/or lime juice.
