Buddha’s Sausage & Peppers

INGREDIENTS

  • 5Italian sausages, sweet
  • 1green pepper, seeded and sliced
  • 1red pepper, seeded and sliced
  • 1smallyellow onion, sliced
  • 1smallred onion, sliced
  • 4garlic cloves, minced
  • 2tablespoonsbasil, oregano, rosemary, and thyme(or your favorite Italian seasoning)
  • 2tablespoonsolive oil
  • 34 cupwhite wine (I use 1 mini bottle)
  • 1red pepper flakes, to taste(optional)

    DIRECTIONS

  • In a large sauté pan or frying pan add oil over medium heat and add sausages. Brown sausages on all sides (about 10 minutes). Remove sausages and cut into bite sized pieces (doesn’t matter how big-whatever sized "bite" you like).  Set aside.
  • Add onions and garlic to pan. Cook about 3-5 minutes stirring to incorporate any brown bits from sausages and onions start to separate well.
  • Add peppers and spices to pan. Cook stirring for another3-5 minutes.
  • Stir in white wine and sausages and cover.  Simmer for about 15 minutes. Sausages should be done and peppers are tender.
