Celebrate Almost-Spring by Making Super Easy Strawberry Cobbler

It’s not quite spring yet, but you can feel in the air that we’re getting there. The evenings are brighter, thanks to daylight savings time ending, and plants are beginning to bloom. After a long winter of citrus, the first strawberries have begun to arrive at my local grocery store, an event I celebrate by buying far too many of them. Maybe you did the same, and you have too many starwberries after so many months of no good fresh strawberries. Don’t worry—you can turn that into a simple, delicious, perfect for the end of winter and the very beginning of spring dessert: Easy Strawberry Cobbler. 

How easy is it? So easy that you use Bisquick or another similar baking mix, rather than measuring out the flour. You could, of course, measure out flour and baking powder as in our excellent Easy Peach Cobbler if you don’t have or don’t want to use Bisquick. The turbinado sugar (also known as Sugar in the Raw, like the packets you see in Starbucks) gives the cobbler that extra textural crunch as well as sweetness. But you can use whatever other sugar you have on hand instead. 

Easy never tasted so awesome.

All you do is mix up strawberries with some sugar, cornstarch, salt, and vanilla extract and dump them in the bottom of a casserole dish. Dollop the Bisquick dough over them, sprinkle with the turbinado or whatever else you have, and throw it in an oven. The delicate sweetness of the berries gets amped up here, and you can cut it with a little lemon juice if it gets too sweet for you. Serve it with some fresh whipped cream, ice cream, or even a giant dollop of yogurt for a perfect March dessert. It won’t even take you more than an hour from strawberries to strawberry cobbler.
