As people are staying home at the current time, many are getting creative with baking in the kitchen. But if you don’t have time to make an entire cake from scratch, there are quick, easy and cheap alternatives. The only equipment you’ll need is a microwave and a mug!
Mug cakes are a delicious student staple, as they’re incredibly easy to make.
And while we’re all working from home, a mug cake is the perfect thing to snack on in between video calls.
Mug cakes are particularly lockdown friendly, as they use ingredients most of us have lying around in our pantries.
There are plenty of recipes online for mug cakes, but BBC Good Food have a particularly good recipe for one with chocolate chips.

You will need:
- 4 tbsp self-raising flour
- 4 tbsp caster sugar
- 2 tbsp cocoa powder
- 1 medium egg
- 3 tbsp milk
- 3 tbsp vegetable oil or sunflower oil
- a few drops of vanilla essence or other essence (orange or peppermint work well)
- 2 tbsp chocolate chips, nuts, or raisins etc (optional)
Add dry ingredients to a large, microwave safe mug and mix together.
Crack one egg into a separate bowl and add to the dry ingredients.
Mix together until the mixture is thick and as combined as possible.

You can then add the milk, oil and vanilla essence to the mix.
When the mixture is all well mixed and free of lumps, you can mix in your chocolate chips or other toppings.
Place the mug in a microwave and cook on high for 1½ to 2 minutes,
If the cake has stopped rising and is firm to touch, let it cool slightly and it’s ready to serve!
Mug cake tips
If you don’t have any eggs, switch it out for an extra spoon of oil.
And if you’re rationing your milk, just replace with the same amount of water.
Plain flour also works just as well as self-raising flour.
Although this recipe includes chocolate chips, you can get a bit creative with your chosen toppings.
Try adding blueberries for a blueberry muffin mug cake, or add a few drops of orange or lemon essence.
You can also top your mug cakes with icing or buttercream.
A scoop of ice cream also makes for a tasty treat on top of warm cake.
