Pepto-Bismol Cake

This recipe is intended for entertainment purposes only, though the flavor isn’t horrible. Also, the Pepto remains active even after being baked, so it really does make a nice dessert option for anyone experiencing heartburn, indigestion, you know the drill. For an extra bright cake, use 1/2 cup Ultra Pepto and 1/2 cup water in the cake mix.

Ingredients

CAKE

  • 1(16.25-oz.) white cake mix
  • 1(8-oz.) bottle Pepto-Bismol
  • 2/3 cup canola oil
  • 3large egg whites
  • 2(16-oz.) containers white icing

GLAZE

  • 1/2 cup Pepto Bismol Ultra
  • 3 cups powdered sugar
  • 12Pepto Bismol chewable tablets

How to Make It

Step 1

Preheat oven to 350°F. Lightly coat the bottom of 3 (8-inch) round cake pans with baking spray or shortening.

Step 2

Prepare the Cake: Beat together cake mix, Pepto Bismol, oil, and egg whites in the bowl of a stand mixer fitted with a paddle attachment on medium speed for 3 minutes. Pour batter into prepared pans, and bake in preheated oven until a toothpick inserted in middle comes out clean, about 23 minutes. Let cool on a wire rack in pan 10 minutes; remove from pan to cool completely, about 30 minutes.  

Step 3

Place 1 layer on a serving plate, and spread 1/2 cup icing over top. Repeat with remaining 2 layers. Spread a light coating of icing over entire cake as a crumb coat. Chill 30 minutes.

Step 4

Spread remaining icing over cake, creating a super smooth surface. Chill at least 30 minutes.

Step 5

Prepare the Glaze: Whisk together Pepto Bismol Ultra and 1 cup of the powdered sugar in a medium bowl until smooth. Add remaining powdered sugar, 1/2 cup at a time, until glaze is smooth. Pour glaze over top of cake, and allow it to drip down sides. Garnish with tablets.
