Phil Vickery shares ‘very simple’ bread recipe to make at home during coronavirus lockdown

Phil Vickery is a TV chef who recently shared his simple bread recipe with viewers on This Morning. With the coronavirus lockdown continuing, many Britons will be looking to their cupboards to make their own foods. How can you make bread?

The UK government has advised Britons to stay at home as much as possible.

Due to stockpiling, some supermarket shelves have been short on essential supplies.

This means many have turned to their cupboards supplies to see what they can make for themselves.

During a recent appearance on This Morning, Phil Vickery told viewers how to make their own bread.

The expert explained the bread can be made with just five basic ingredients.


600g strong white flour

One level tsp salt

Two tbsp any oil

One x 7g sachet dried yeast

300ml warm water


Phil explained: “It’s very simple, five ingredients. [In a mixing bowl] I’ve got bread flour, I’ve put 600 grams in.

“I only use one sachet of dried yeast. The only think you have to put in is salt. If you don’t put salt in, it will fall.

“Then put oil in – or butter – it’s up to you. That gives it a nice structure.

“Turn on the mixer, add enough warm water to make a dough.”

He also explained that those without an electric mixer can mix the dough by hand for the same results.

When the mixture starts to come away from the bowl, budding chefs should take it out to knead.

Phil continued: “I was told by a chef years ago that you knead it for five minutes.

“After kneading, put it into your bowl to leave it to double in size. This will take anywhere from 15 minutes to half an hour depending on how warm the kitchen is.

“I will then mix it again nice and gently. What we don’t want to do is knock the air out too much.”

Once the dough has been kneaded, the chef put it in a loaf tin and covered it in clingfilm.

The dough is left once again until it doubles in size, or for around 40 minutes.

Phil added: “Then what I do is brush this with water and dust it with flour on top and slash across the top.”

The loaf can then be put in the oven for 20 to 30 minutes on 220 degrees celsius Gas 7.
