PSA: Cabbage Is Your Quarantine Kitchen’s Secret Weapon

Who’d have thought it would take a national sheltering in place to discover the wonderful world of the humble cabbage. And with good reason: store-able, versatile, and tasty as it can be, cabbage is the ideal pandemic produce item. You can store it in the fridge for literally months. It can be eaten raw or cooked. It is low in calories and carbs, high in fiber, and has a potent dose of antioxidants and vitamins C and K, as well as other B-complex vitamins and minerals like potassium, magnesium, iron, and manganese. But most importantly, it is really delicious.

Easy never tasted so awesome.

For starters, choose whole heads of cabbage that are heavy for their size. Store whole, in a plastic bag, in your fridge. Then it's time to find a recipe that excites you! Meet the many ways to cook up your best new culinary friend.

Whole Roasted

Roasting your cabbage whole is really easy and sets you up for all sorts of other fast and easy recipes. This is a great technique to use if you have a cabbage a little on the older side or want to be able to do quick recipes on the fly.


Cabbage is a natural in soups of all kinds. Some of my favorites are a classic sweet and sour, this pantry-friendly creamy potato and cabbage, this version with tiny meatballs, and a hearty stew with sausage.


Raw cabbage can be delicious side to any main dish: crunchy and bright, just peppery enough to balance richness, but with underlying sweetness. There are a million slaw recipes out there, but I particularly love this marinated slaw, a surprising mango version, and this one with apples.


In a time when getting access to fresh lettuce can be complicated, cabbage is an excellent and creative substitution. This Chinese Chicken version is a great lunch salad, we love this miso cabbage salad with fish, and this one with red cabbage, oranges, almonds, and dates is as gorgeous to look at as it is delicious.


Nothing is more comforting than a stuffed cabbage roll. And while it can be time consuming to make these savory treats, many of us have some extra time on our side right now! Try a traditional Polish version, branch out with this Finnish-style roasted cabbage roll with a bacon glaze, or take a more Asian-inspired approach with this broken rice stuffed version.


Casseroles are also making a big comeback as we all reach for dishes that comfort us (and are easy to prepare and store). Cabbage is a great addition to a hearty casserole; I love this one with sausage, this white bean version, and this decadent creamy version with cheese.


Finally, cabbage and pasta are actually great pals, and a perfect pantry meal to make! Try this version with pickled raisins for something surprising, this one with bacon and mushrooms if you want something meaty, or this cheesy version with whole wheat pasta that is sure to be a kid pleaser.
