This no-fuss lava cake is comfort dessert at its finest. It’s dangerously good, with a perfectly cooked cake topping and a simple, but satisfying lava made from instant pudding. The cake batter bakes over the pudding, creating a perfect cake top with moist, gooey lava underneath. You likely already have the ingredients at home, but to take things up a notch, use a good quality vanilla extract—it makes a big difference. This makes a lot, so it’s perfect to share with friends or bring to a potluck—you won’t have to worry about leftovers, trust us. Ingredients
- 2 cups granulated sugar
- 1 3/4 cups (about 7 1/2 oz.) all-purpose flour
- 3/4 cup unsweetened cocoa
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon kosher salt
- 1/2 cup canola oil
- 1 teaspoon good quality vanilla
- 2large eggs
- 3 cups whole milk, divided
- 1 cup boiling water
- 1(3.9-oz.) pkg. chocolate instant pudding mix
- 1 1/2 cups semisweet chocolate chips
- Ice cream, for serving
How to Make It
Step 1
Spray a 5-quart slow cooker with baking spray.
Step 2
Whisk together sugar, flour, cocoa, baking powder, baking soda, and salt in a large mixing bowl until combined. Add oil, vanilla, eggs, and 1 cup of the milk; stir to combine. Stir in boiling water just until combined. Pour cake batter into prepared slow cooker.
Step 3
Whisk together pudding mix and remaining 2 cups milk in a medium bowl until smooth. Let stand until slightly thickened, about 5 minutes. Pour pudding in center of cake batter in the slow cooker. Sprinkle evenly with chocolate chips.
Step 4
Place lid on slow cooker, and cook on HIGH until cake is dry to the touch, about 2 hours and 30 minutes. Serve with ice cream.
