Pinterest has no shortage of keto recipes for protein bars, fat bombs, bagels, wraps, cookies, and even holiday desserts, like pumpkin or pecan pie — all sans carbs, of course. We firmly believe that you can never have too many keto makeovers of your favorite comfort foods, so naturally the internet has now blessed us with a keto waffle recipe too.
Meet the “chaffle,” aka a waffle made with cheese and eggs, which lets keto dieters sit down to a warm, tasty waffle over brunch with friends without feeling serious FOMO.
Here’s a drool-worthy example from Karly Campbell, a blogger over at That Low Carb Life, whose version of a chaffle is made from one large egg and a half a cup of finely shredded mozzarella cheese. Using a mini waffle maker, this recipe yields exactly two chaffles.
To be clear, the base of the waffle is cheese — not a grain — and that’s what makes it keto-friendly. There’s tons of room for variation here, too. As for the cheese, you’ll need one that can melt easily but also has some structure; mozzarella or cheddar are safe bets. You can also add almond flour, which makes the waffle more “bready” in texture and cuts down on that eggy taste. From there, have some fun with seasonings and toppings. Throw on some avocado, put an egg on it, turn two chaffles into a burger bun! The world is your chaffle!
