We just got done listening to Trader Joe's latest podcast, and we can hardly contain our excitement. In the latest episode, called The Spice Trade, TJ's announced a new seasoning blend that's coming to stores. It's called "Everything but the Elote," and riffs off of their ever-popular Everything But the Bagel Seasoning name.

For those of you wondering what elote is, it's Mexican street corn. Think of fresh corn on the cob smeared with mayo, smattered with chili powder and finished off with a sprinkling of Cotija cheese and freshly squeezed lime juice.

And even though elote is wonderful just the way it is, Trader Joe's seasoning blend dials up the flavor to a whole new level. Reminiscent of traditional elote, the blend is made up of dehydrated corn and chipotle chile, but it's also packed with Parmesan cheese, buttermilk flavor, cilantro and cumin. Talk about a flavor powerhouse.

Not only will this blend make homemade elote a breeze, but we're already dreaming of all the ways we can use it once it comes out. From EBTE dip to EBTE marinated meat to EBTE tacos, we have a feeling the seasoning blend will quickly become a staple in our pantries. And if you're just as excited as we are, be on the lookout for the mix in stores early next year!
