Turkey and Pimiento Cheese Sandwich

The hefty, meaty slices of thick cut bacon hold up well in this club-style sandwich. Use a store-bought pimiento cheese or make your own using freshly grated cheddar cheese and your favorite mayonnaise; any leftover pimiento cheese is delicious spooned on top of a bowl of grits or mixed into macaroni-and-cheese.  Serve this hearty sandwich alongside crispy homemade sweet potato chips to make the perfect fall weekend meal.

Ingredients

  • 2slices thick-cut bacon
  • 2 tablespoons mayonnaise
  • 3slices multigrain bread
  • 2slices tomato
  • 2Bibb lettuce leaves
  • 2 1/2 ounces sliced roasted turkey
  • 3 tablespoons pimiento cheese

How to Make It

Cook bacon in a small skillet over medium until crisp, turning occasionally, about 8 minutes. Drain on paper towels. Spread 1 tablespoon mayonnaise each over two slices of bread. Top one slice with tomato slices, lettuce, and bacon; top with second slice of bread, mayonnaise side down. Top second slice of bread with turkey. Spread pimiento cheese over third slice of bread and place on top of turkey to make a club-style sandwich. Cut into triangles and secure with toothpicks. Serve immediately.
