100g fusilli pasta
200g Love Life Wholemeal Fusilli Pasta
1 tbsp oil
1 onion, chopped
1 clove garlic, chopped
Pack 6 tomatoes, diced
1 courgette, diced
400g can cannellini beans, drained and rinsed
150ml vegetable stock
2 tbsp tomato purée
125g pack lighter mozzarella, grated
1. Cook the pastas in boiling water for 9-11 minutes or until tender, then drain.
2. Heat the oil in a frying pan and fry the onion and garlic for 2-3 minutes, add the tomatoes, courgette, beans, stock and tomato purée and fry for 4-5 minutes. Season and stir in the pasta. Transfer to an ovenproof dish and sprinkle over the cheese. Place under a preheated grill for 2-3 minutes until golden.
