Chicken dinners don’t have to be boring. If you mix up the preparation and sauces, you could have chicken every night without ever getting bored. Promise! This tangy peanut marinade gives plain chopped chicken a rich, salty, slightly sweet flavor that’s savory and delicious, and not at all boring. Cook the chicken on skewers on the grill or in the oven for an easy appetizer or entrée that’s fun enough for a party but easy enough for a weeknight dinner.
Instead of plain grilled skewers with peanut dipping sauce, this recipe has you marinate the chicken right in the peanut sauce. To make the sauce,whisk half a cup of peanut butter with some soy sauce and toasted sesame oil, a bit of white vinegar, minced green onions, ground ginger, and six cloves of freshly minced garlic. Toss all the chicken in the marinade and let it sit for at least an hour, or overnight in the refrigerator.
When ready, poke metal or bamboo skewers through the meat to make convenient sticks. If you’re using bamboo, make sure to soak the skewers for about 30 minutes first, especially if you’re planning on cooking them on a grill. Nobody likes it when their skewers catch fire. You can eat them right off the skewers if you like, but be careful when handling metal skewers, because they will be hot.
