Apple cinnamon sour dough bread

Ingredients

  1. 230 g water
  2. 150 g sour dough
  3. 40 g sugar
  4. 380 g bread flour
  5. 30 g milk powder
  6. 5 g salt
  7. 35 g olive oil
  8. 2 tbsp raisins
  9. For apple mixture
  10. 2 small apple cut to 1cm cube
  11. 2 tsp cinnamon
  12. 1 tbsp sugar

Steps

  1. My sour dough

  2. Add water, sour dough, sugar, milk power and flour. Mix with spoon

  3. Last add salt and olive oil

  4. Mixing 10minutes until dough is shiny and smooth

  5. Proof for 4 hours

  6. Cut apple to about1 cm cube, add cinnamon and sugar, I airfry the mixture at 160 deg c for 15 minutes, this is personal preference as I like the apple to be softer

  7. After 4 hours, double in size

  8. Divide to 2 portions, gently push the dough to about 5×10 inches, place raisins and apple mixture

  9. Roll, cut to half and twisted the roll

  10. Place inside the baking tin

  11. Proof another 1hour or until double the size with hot water below, in the oven

  12. After 2nd proof, preheat the oven to 190 degree c, bake for 40minutes

  13. Bread temperature 96~98 degree, well cook

  14. Moist and soft 😃
