Caramelized Onion Tart with Goat Cheese and Thyme


  1. 1 packet frozen puff pastry thawed
  2. Olive oil spray
  3. 2 onions, sliced
  4. 2 tbsp brown sugar
  5. Salt
  6. Pepper
  7. 1 jar goat cheese
  8. Thyme


  1. Preheat oven to 200 and line tray with baking paper. Roll out puff pastry and prick all over with fork.

  2. Bake for 15 minutes.

  3. Add onion to pan with oil, and cook for 10 minutes. Add brown sugar and cook for 5 minutes more. Season with salt and pepper.

  4. Spread onion over puff pastry. Sprinkle with goat cheese and thyme

  5. Bake another 10 minutes. Cool and cut into squares and serve
