Cauliflower Pizza Steaks

This pizza may not have any dough, but that doesn’t make it any less satisfying. The cheese, meat, and pepperoni come at the forefront, so you get the feeling that you’re eating pizza before you realize you’re eating cauliflower. The crisp, roasted, and slightly salty cauliflower is an easy alternative to a cauliflower-based crust that you can actually pick up with your hands. Plus, no extra equipment, like a food processor, is needed. 

Ingredients

  • 1head cauliflower
  • 2 teaspoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 ounce Parmesan cheese, grated (about 1/4 cup)
  • 1/4 cup pizza sauce
  • 2 ounces pre-shredded mozzarella cheese (about 1/2 cup)
  • 8pepperoni slices, cut in quarters
  • Fresh basil leaves, optional

How to Make It

Step 1

Preheat oven to 475°F. Cut 4 (1-inch) “steaks” from head of cauliflower, reserving florets from outer edges for another use. Trim most of the tough core from bottom.

Step 2

Place cauliflower steaks on a rimmed baking sheet; brush both sides with oil, and sprinkle with salt and pepper. Bake in preheated oven until bottom is browned and slightly crisp around the edges, about 7 minutes. Flip cauliflower, and sprinkle each steak with 1 tablespoon of the Parmesan cheese, allowing excess to fall between the crevices onto baking sheet. Any cheese that falls to the bottom will help form a crust on the bottom…yum! Return to oven, and cook an additional 5 to 7 minutes or until golden.

Step 3

Spread each steak with 1 tablespoon sauce, 2 tablespoons mozzarella, and 8 pepperoni pieces.  Bake until cheese is melted and beginning to brown, about 5 minutes. Garnish with basil, if desired.
