jars (24 oz each) marinara sauce
oven-ready lasagna noodles (from 8- or 9-oz package)
container (15 oz) part-skim ricotta cheese
cups chopped deli rotisserie chicken (1/2-inch pieces)
cups finely shredded mozzarella cheese (two 8-oz packages)
tablespoons butter
cup Progresso™ Panko Italian style crispy bread crumbs
cup grated Parmesan cheese

  • 1Heat oven to 350°F. Spray 13×9-inch (3-quart) baking dish with cooking spray.
  • 2Cover bottom of baking dish with 1 cup of the marinara sauce. Arrange 3 noodles on top of sauce. Top with one-third of the ricotta cheese, one-third of the chicken, 1 cup of the mozzarella cheese and 1 cup of the marinara sauce.
  • 3Repeat with two additional layers, and top with noodles, remaining sauce and remaining 1 cup mozzarella cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish, and seal tightly.
  • 4Bake 45 minutes. Meanwhile, in small microwavable bowl, melt butter; mix in bread crumbs and Parmesan cheese until mixed well. Remove lasagna from oven, uncover and top with bread crumb mixture. Bake 15 to 20 minutes or until bubbly and bread crumbs are lightly brown. Let stand 10 minutes before serving.

Expert Tips

  • Oven-ready lasagna noodles are found in the same aisle as regular lasagna noodles. They’re nice because they don’t require boiling before assembly, speeding up your meal prep! Spacing them in the dish may look sparse, but they will expand to fill the dish during cooking.
  • Have cooked chicken breasts in your refrigerator? Use instead of rotisserie chicken as a great way to reinvent your use of leftovers.

More About This Recipe

  • When you think of lasagna, you likely think of an Italian sausage- or ground beef-filled pasta dish, or perhaps you much prefer the meatless version in which the sauce and the cheeses star as the main attraction. This chicken lasagna goes way beyond the classic and instead joins two Italian dinners together for the ultimate twist on tradition. Most chicken lasagna uses a white sauce such as Alfredo, which makes this recipe even more unexpected—it aligns with classic chicken Parmesan and uses marinara. What we love about this dish is that you can enjoy two Italian restaurant-worthy dishes in one—not to mention, it’s so easy thanks to oven-ready noodles and rotisserie chicken. Oven-ready noodles do not require boiling over the stove and instead, cook from the moisture in the sauce.
