Chicken Parmesan Lasagna

This fun mash-up of chicken Parmesan and lasagna is an easy and delicious dish to prepare for your weeknight dinner.

Ingredients

jars (24 oz each) marinara sauce

oven-ready lasagna noodles (from 8- or 9-oz package)

container (15 oz) part-skim ricotta cheese

cups chopped deli rotisserie chicken (1/2-inch pieces)

cups finely shredded mozzarella cheese (two 8-oz packages)

tablespoons butter

cup Progresso™ Panko Italian style crispy bread crumbs

cup grated Parmesan cheese

Steps

  • 1Heat oven to 350°F. Spray 13×9-inch (3-quart) baking dish with cooking spray.
  • 2Cover bottom of baking dish with 1 cup of the marinara sauce. Arrange 3 noodles on top of sauce. Top with one-third of the ricotta cheese, one-third of the chicken, 1 cup of the mozzarella cheese and 1 cup of the marinara sauce.
  • 3Repeat with two additional layers, and top with noodles, remaining sauce and remaining 1 cup mozzarella cheese. Spray sheet of foil with cooking spray; place sprayed side down on baking dish, and seal tightly.
  • 4Bake 45 minutes. Meanwhile, in small microwavable bowl, melt butter; mix in bread crumbs and Parmesan cheese until mixed well. Remove lasagna from oven, uncover and top with bread crumb mixture. Bake 15 to 20 minutes or until bubbly and bread crumbs are lightly brown. Let stand 10 minutes before serving.
