Coconut Curry Pumpkin Soup

Ingredients

  1. Olive oil spray
  2. 1 tsp onion powder
  3. 1 tsp garlic powder
  4. 1 tsp ginger powder
  5. 2 tsp curry powder
  6. 1 1/2 tsp cinnamon
  7. 1 tsp nutmeg
  8. 1/2 tsp cloves
  9. Salt
  10. Pepper
  11. 3 cups pureed pumpkin
  12. 1/4 cup brown sugar
  13. 4 cups vegetable stock
  14. 1 (400 ml) can coconut milk

Steps

  1. Heal oil in a large pot. Add onion and cook for 5 minutes. Add garlic and ginger. Add curry, cinnamon, nutmeg, cloves, salt and pepper.

  2. Stir in pureed pumpkin and brown sugar, then stir in vegetable stock and bring to a boil. Reduce heat and simmer for 15 minutes. Add coconut milk, cook over low heat, season with salt and pepper.

  3. Serve.
