I’ve even used a rotisserie chicken shreddedand just cooked it as directed
Ingredients
- 3-4 boneless skinless chicken breast
- 1 can black beans rinsed and drained
- 1 can corn drained
- 1 lime squeezed
- 2 teaspoon minced garlic
- 1 teaspoon salt and cumin
- 1/2 teaspoon chili powder, paprika, ground coriander and pepper
- 1 jar mango salsa
- 1/4 cup chopped cilantro
- Rice
- sliced Mango
Steps
Place everything in a slow cooker except rice and mango slices
Cook on low for about 8 hours
Then remove and shred chicken and then mix back into slow cooker
Serve over rice with mango slices and enjoy.
