Crockpot mango salsa chicken

I’ve even used a rotisserie chicken shreddedand just cooked it as directed

Ingredients

  1. 3-4 boneless skinless chicken breast
  2. 1 can black beans rinsed and drained
  3. 1 can corn drained
  4. 1 lime squeezed
  5. 2 teaspoon minced garlic
  6. 1 teaspoon salt and cumin
  7. 1/2 teaspoon chili powder, paprika, ground coriander and pepper
  8. 1 jar mango salsa
  9. 1/4 cup chopped cilantro
  10. Rice
  11. sliced Mango

Steps

  1. Place everything in a slow cooker except rice and mango slices

  2. Cook on low for about 8 hours

  3. Then remove and shred chicken and then mix back into slow cooker

  4. Serve over rice with mango slices and enjoy.
