Easter Breakfast Casserole ?

You can prepare this the night before and just bake it in the morning….. ?


  1. 1 pack bacon
  2. 1 yellow onion, chopped
  3. 6 eggs, beaten
  4. 1 bag frozen hash brown potatoes (I used a 30 ounce bag)
  5. 1 (8 ounce) bag shredded cheddar cheese
  6. 1 (16 ounce) container cottage cheese
  7. 1 (8 ounce) block Swiss cheese(chopped into cubes)
  8. 1/4 teaspoon parsley flakes
  9. Sprinkle Black Pepper
  10. Sprinkle salt
  11. Butter cooking spray


  1. In a large pan cook bacon and onion together until bacon is crisp and onions are wilted…..Drain grease……Let bacon and onion cool before adding to the rest of the ingredients…….

  2. Combine all other ingredients in a bowl except for hash browns, then add to cooked bacon and onion….. Add hash brown potatoes to your cooking pan that has been sprayed with butter cooking spray…….

  3. Add wet ingredients to hash brown potatoes and gently mix together, then bake, uncovered in a 350 degree oven for 1 hour or until casserole is lightly browned on top……. I added an extra sprinkle of parsley flakes to the top of my casserole……

  4. Let stand for 15 – 20 minutes, then cut into squares and enjoy ?!!
