French Market Beignets


  1. 1/4 cup shortening
  2. 1/2 cup sugar
  3. 1 tsp salt
  4. 1 cup boiling water
  5. 1 cup evaperated milk
  6. 1 pack yeast
  7. 1/2 cup lukewarm water
  8. 2 eggs
  9. 7 cups sifted flour
  10. Cooking oil
  11. Confection sugar


  1. Combine shortening, sugar, and salt in mixing bowl. Add boiling water, stirring to melt shortening. Add milk, cool to lukewarm.

  2. Soften yeast and lukewarm water. Beat eggs. Add eggs, yeast, and 4 cups flour to milk mixture. Beat until smooth, work in remaining flour.

  3. Turn dough onto lightly floured board, need only until smooth. Place dough in greased Bowl and cover. Refrigerate for 2 hours or up to 5 days.

  4. Roll a bout one fourth of the dough at a time to 1/16 inch thick rectangle. Cut in small squares or triangles, let rise until light. Fry in hot, deep oil until Brown. Shake in bag with confectioners sugar.
