Gazpacho

Ingredients

  1. 3 big ripe tomatoes
  2. 2 cucumbers
  3. 1 red pepper
  4. 1 yellow pepper
  5. 1 clove garlic
  6. 2 tbsp balsamic vinegar (flavored optional)
  7. 1/2 cup water
  8. 1/2 cup extra-virgin olive oil
  9. Kosher salt
  10. Freshly ground pepper
  11. Croutons
  12. 2 tbsp freshly sliced basil

Steps

  1. Peel tomatoes…dip in boiling water to peel easier…and quarter and remove goo

  2. Peel and chop cucumber and garlic, and chop pepper

  3. Combine tomatoes, cucumber, pepper, garlic, vinegar and water in blender. Blend until smooth. Add olive oil and blend to combine. Season with salt and pepper to taste. Cover and refrigerate to chill.

  4. Serve in bowls or cups and top with croutons, basil and drizzle of olive oil.
