This recipe came from a mom and pop joint I used to work at.The dressing is uber traditional, and very flavorful.
- 5 egg yoke
- 1 cup neutral oil
- 1 clove garlic
- Pinch salt
- Pinch white pepper
- 2 tablespoons Dijon mustard
- 8 anchovies
- 1/2 cup water
- 1/3 cup grated Parmesan cheesep
- 2 tablespoons lemon juice
In a blender, combine: egg yokes, garlic, mustard, salt, lemon juice, white pepper, and anchovies. Set aside, do not blend yet!
Blend on low, and slowly pour the oil into the blender. You want proper emulsification. *Add water as needed to keep the blenders contents rolling. When all the oil is added, stop blender.
Pour the dressing into a proper sized container and stir in parmesan cheese. Store in refrigerator, serve when cold.
