Green pea soup


  1. 500 g frozen peas
  2. 1 onion
  3. 3 garlic cloves
  4. Handful spinach leaves
  5. 1 cup vegetable stock
  6. 2 cubes butter
  7. 1 tsp olive oil
  8. 1/2 red bell pepper
  9. 1/2 yellow bell pepper
  10. 1/2 cup boiled beans (i ised four bean mix can)
  11. 1 lemon
  12. 1 tsp parsley
  13. 2 tsp cream
  14. to taste Sea salt
  15. to taste Pepper
  16. Chilli flakes for garnishing


  1. Roast bell peppers and garlic in a heavy pan with olive oil

  2. On a medium heat melt butter in a pot, add chopped onions and cook until tender. Add beans and cook for 5 mins. Turn off the flame

  3. In a blender take roasted bell peppers, garlic, onions, beans, spinach and squeeze a lemon. Blend until smooth puree is formed and strain it back into the pot (Use some water if needed) and bring it to boil

  4. Add salt, pepper, parsley boil for 10-15 mins

  5. Garnish with cream and chilli flakes serve with a sourdough bread or enjoy on its own.
