Preheat oven to 350 degrees F (180 degrees C). Heat oil in a skillet set over medium-high heat. Cook onion, celery and pepper until softened, about 5 minutes. Stir in ketchup. Remove pan from heat and divide sauce mixture in half.

Combine one half of the sauce with ground beef, breadcrumbs, egg, salt and pepper. Mix gently. Pat mixture into a lightly greased 9-x 5-in (2 L) loaf pan. Bake for 1 hour or until an instant read thermometer reaches 160 degreesF (70 degreesC).
Rest for 5 minutes. Reheat the reserved sauce mixture. Slice meat loaf and serve with sauce.
Twists:
Twist 1: For a cheesy treat, top meatloaf with 1/2 cup shredded mozzarella or cheddar cheese.
Twist 2: For cook-once-eat-twice convenience, serve sliced warm meatloaf on toasted Kaiser rolls with chili sauce.
Twist 3: For more fibre, substitute whole wheat bread crumbs or crushed bran flakes for the regular breadcrumbs.
Twist 4: For a Mexican twist, use Heinz Chili Sauce instead of ketchup and stir 1 tbsp chili powder into the sauce mixture.
Twist 5: For extra kick, substitute Heinz Hot & Spicy Ketchup for half of the regular ketchup.
Twist 6: For a barbecue twist, substitute Heinz Western Grill BBQ Sauce or other barbecue sauce for the ketchup.
