Threw together what I had and it turned out pretty good. Topped it off with sour cream and salsa verde.
- 1.5 lbs ground sirloin
- 1 diced red bell pepper
- 1 can cream of chicken
- 1 can rotel
- 1 can black beans
- 1 envelope taco seasoning
- Mexican chili powder
- 1 bag Shredded Mexican mix cheese
- Soft tortillas
Brown the sirloin and season to taste with salt, pepper, and Mexican chili powder.
Add the diced bell pepper and let it cook for a minute or so.
Take the sirloin and mix in the cream of chicken, rotel, black beans, and taco seasoning.
Put mixture in a 9×13 casserole dish at 375° for 30 minutes covered with foil.
Remove foil, add a layer of cheese, then cover with two burrito tortillas and cover them with another layer of cheese.
Put it back in the oven for another ten minutes or till the cheese is how you like it.
