Mrs. Dolman's almond cake

This recipe comes from the cook in my great grandmother’s house during the 1930’s. It’s a delicious and deffiantly doesn’t last long!!

  • 170g caster sugar
  • 170f margarine
  • 3 eggs
  • 85g plain flour
  • 85g ground almonds
  • 1 teaspoon almond essence
  • a good pinch of salt
  • Method

      1. cream and butter the sugar
      2. add eggs, salt, almond essence and the the ground almonds
      3. add the flour slowly
      4. beat well
      5. bake in a moderate oven at 150C/gas mark 2 for 45- 60 mins( this cake doesn’t rise very much- and it is better if slightly under cook as it is very moist then! )
