Roasted potatoes and peas

I wanted a companion dish to cook with meatloaf in the oven.So I came up with this veggie dish, full of flavor.


  1. 4 potatoes, peeled,1/2 inch cubes
  2. 1 1/2 cups frozen peas
  3. 1/4 cup Extra Virgin Olive oil, good quality, about
  4. to taste Dill weed
  5. to taste Italian seasoning
  6. to taste Onion powder
  7. to taste Sea salt
  8. to taste Fresh cracked black pepper
  9. 1/4 cup parmesan cheese
  10. 1/4 cup vegetable broth


  1. Combine peas and cubed potatoes in a 9 inch aluminum pan

  2. Add Olive oil and stir in to coat veggies

  3. Add Dill, Italian seasoning, onion powder, sea salt, and pepper, mix with spoon to incorporate

  4. Top with Parmesan cheese and bake at 350° for 45mins

  5. Remove from oven, use spoon to turn over veggies, add veggie broth and bake for 10-15 mins

  6. Serve and enjoy
