Summer Garden Salad with Balsamic Citrus Dressing


  1. 4 cups fresh spinach
  2. 1 large tomato
  3. 1 cucumber
  4. 1 red bell pepper
  5. 1/2 of a red onion
  6. Dressing:
  7. 2 tbsp extra virgin olive oil
  8. 1 tsp balsamic vinegar
  9. 1/2 of a lime
  10. Salt (to taste)


  1. Chop up the fresh spinach. Dice the tomato, cucumber, and bell pepper. Thinly slice the red onion. Combine in a bowl.

  2. Prepare the dressing by combining the olive oil, balsamic vinegar, and freshly squeezed lime juice. Whisk together until thick.

  3. Add dressing to salad with a pinch of salt and toss to combine. Transfer to serving bowl and enjoy.
