Sweet Heat Shrimp Sautee

In an effort to eat more meals that consist of whole,unprocessed foods, I concocted this recipe; which is 99% whole and unprocessed.. the Jalapenos came from a jar. But, in time, I’ll be making my own diced Jalapenos too!! Stay tuned and enjoy!!

Ingredients

  1. 3 Red Bell Peppers
  2. 1/2 of a Fresh Pineapple
  3. 1 tsp Diced Jalapenos
  4. 25 Peeled & Deveined Shrimp
  5. 1 Whole Lemon (juice)
  6. 1 tsp Sea Salt (or to taste)
  7. 1 tsp Onion Powder (or to taste)
  8. 1 tsp Black Pepper (or to taste)
  9. 3 Tbsp Old Bay Seasoning
  10. 3 Tbsp Grape Seed Oil

Steps

  1. Cut fresh pineapple and red bell peppers into small pieces.

  2. Pour grapeseed oil into a skillet and heat on low.

  3. Add peppers, pineapples, and diced jalapenos to the heated skillet and season to taste (see seasonings above). Cover and allow to simmer, stirring occasionally.

  4. Squeeze the juice from one whole lemon onto the peeled and deveined shrimp. Pour old bay onto the shrimp and mix well. Allow to set for 10-15 minutes.

  5. Place seasoned shrimp into the skillet with the peppers and pineapples, cover and allow to simmer until shrimp is fully cooked (8-12 minutes).

  6. Serve over rice or pasta.
