- 2 cups Sweet Potato, mashed
- 1 ⁄2 stick Unsalted Butter, room temperature
- 1 ⁄2 cup Milk
- 2 medium Egg
- 1 teaspoon Vanilla Extract
- 1 ⁄2 teaspoon Salt
- 1 cup Sugar
- 1 cup Brown Sugar
- 1 cup Flour
- 1 cup Chopped Pecans
- 1 ⁄4 cup Pecan Halves
- 2 sticks Unsalted Butter, melted and cooled
Blend the first seven (7) ingredients in a large bowl until smooth but firm. Do not over blend or casserole will be runny.
Add sweet potato mixture to a shallow baking dish.
Mix together brown sugar and flour very well in a separate bowl.
Add the nuts into brown sugar mixture and mix well.
Layer brown sugar and pecan mixture over the top of the sweet potatoes.
Drizzle melted butter over the top of the casserole.
Bake for 20 to 30 minutes until firm.
