Vodka (or not) Pasta Sauce – oil free & VEGAN

Pasta sauces can be so varied and I didn’t want a typical sugo for my penne pasta this time, not a ‘meaty’ ragu sauce nor pesto. So, I searched for a sauce that combined all the ingredients that I love in combination to give this pasta sauce a creamy and tomatoey taste. Vodka sauce seemed to be the right thing – it’s great without (better for kids) and mostly Carrie’s recipe on her #walderwellness page seemed to fit most of my requirements.

Ingredients

  1. 7 c activated cashews
  2. 1 tbsp dried thyme
  3. 1 tbsp Himalayan salt
  4. 7 handful =?g fresh basil leaves
  5. In this new version of cookpad, I cannot save a recipe and
  6. change / adjust amounts later when remaking recipe – ANNOYING!!
  7. So, I have to post it a bit unfinished and not perfect 🙁
  8. 7 c peeled and already slow cooked tomatoes
  9. Multiple dashes of pepper
  10. Possibly
  11. Depending on water content of slow cooked tomatoes
  12. After blending you might have to add some c of hot water / broth
  13. To achieve a smooth, but not overly thick sauce consistency
  14. Optional
  15. 1-2 Shot(s) of plain vodka
  16. Pasta
  17. 2 kg Penne (ca. 100g / person)
  18. Decoration / Topping
  19. Vegan parmigiana (my recipe)
  20. Dash multicolored ground pepper
  21. Thin strips of fresh basil

Steps

  1. With all of the above on hand and ready to go, this should be fast to put together

  2. Place pasta into slightly salted, boiling water until ‘al dente’ texture (check package or fresh pasta only a few minutes)

  3. Add first 5 ingredients to blender (due to large amount please for 2-3 turns) until silky smooth

  4. Each time pour blended sauce into larger pot than pasta is cooking in until all in

  5. Now add your shot(s) of Vodka, stir and try

  6. If necessary adjust for less thickness w/½c hot water or veg broth each time, then stir and check

  7. Add ground pepper a few dashes a time, stir, then try and continue or stop if satisfied

  8. Pasta will be ready to strain and slowly add to pot with ready vodka sauce

  9. Mix well with more of a folding motion to not destroy the shape of the pasta

  10. Serve on plates or keep warm in e.g. a crock pot

  11. Sprinkle shreds of fresh basil on top and a dash of pepper

  12. Dust with vegan parmigiana just before eating
