You’re Going to Love Cucumber Tea Sandwiches When You Try Them This Way

These tasty little treats are the ultimate royal wedding viewing party snack, hands down (and pinkies up).

With the Royal Wedding on the horizon, cucumber tea sandwiches are at the forefront—and we’re here for it.

Tea sandwiches are the epitome of English tradition—carefully cut into triangles, rectangles, or squares, and typically reserved for afternoon tea. Traditional tea sandwiches are slathered with butter (or cream cheese per our delicious take circa 2006) and filled with thinly sliced cucumber, but we’ve decided it’s high time to give this dainty sandwich a few major upgrades.

We made it easy by adding flavor boosters to butter (and letting feta take center stage), so all you need to do is stir the ingredients together, thinly slice an English cucumber or mini seedless cucumbers, and build the sandwiches. Here it goes:

Cucumber-Tahini: Mix 1½ tablespoons softened unsalted butter, 2 teaspoons tahini, 1 teaspoon lemon zest and ⅛ teaspoon salt in a small bowl until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed, with the tahini butter. Form a sandwich with the buttered bread and thinly sliced cucumbers. Cut into squares.

Cucumber-Mustard: Mix 2 tablespoons softened unsalted butter, 1 teaspoon grain mustard, and ⅛ teaspoon salt in a small bowl until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed with the mustard butter. Form a sandwich with the buttered bread and thinly sliced cucumbers. Cut into squares.

Cucumber-Harissa: Mix 2 tablespoons softened unsalted butter, 1½ teaspoons harissa, and ⅛ teaspoon salt in a small bowl until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed, with the harissa butter. Form a sandwich with the buttered bread and thinly sliced cucumbers. Cut into squares.

Cucumber-Green Curry: Mix 2 tablespoons softened unsalted butter, 1½ teaspoons green curry paste, and ⅛ teaspoon salt in a small bowl until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed, with the green curry butter and top with fresh mint leaves. Form a sandwich with the buttered bread and thinly sliced cucumbers. Cut into squares.

Cucumber & Whipped Feta: Puree ½ cup feta with 3 tablespoons heavy cream until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed, with the whipped feta. Form a sandwich with the bread and thinly sliced cucumbers. Cut into squares.

Cucumber-Anchovy: Mix 2 tablespoons softened unsalted butter, 1 finely chopped anchovy fillet from a tin or jar, ⅛ teaspoon salt, and several grinds freshly ground black pepper in a small bowl until smooth. Dividing evenly, spread 2 slices white sandwich bread, crusts removed, with the anchovy butter. Form a sandwich with the buttered bread and thinly sliced cucumbers. Cut into squares.
